Red Rooster is a European style bistro located in Glencoe, Ontario. The owner Babara Schucko combined her passion for European style food and entertaining into her dream business.
In 2012, Barbara Schucko decided that after years of staying home to take care of her children, it was time for her to follow her own dream- to open a bistro:
“By education, I am a civil engineer. I graduated in Europe, then I got married and had kids. We immigrated to Canada and my education wasn’t accepted here so I stayed home to raise my children for a few years. My first job in Canada was in the automotive industry. It was always my dream to own something and to challenge myself to see if I could do it. I’m very much a people person, I like to entertain and I’m good at it. All my friends would always say that I should do this- open my own bistro- and it was stuck in my mind. I couldn’t do it before because I had to raise my children, we had to pay the bills, pay for their education and so it was never time for me. But since my kids are adults now, I can do what I’ve always wanted to do.”
Barbara explained that her initial vision for the menu looked a lot different from what it is today:
“In the beginning, the plan was to only do crepes but I looked around and to only make one dish like crepes would have been difficult. In Europe, we have small kiosks where you can buy crepes and coffee, and people know to go to that location, but in Canada, you have supermarkets and big restaurant chains, the small businesses have a very hard time. So then I said, ‘I cannot only make crepes, I have to add some other dishes and different ideas for me to survive’ and that’s what I did and actually it worked.” Red Rooster serves European dishes such as baguette sandwiches, cabbage rolls, crepes, daily specials of soup and salad, and gelato!
Why did she choose to open a restaurant?
“I was always the hostess, entertaining friends and people from work and I was good at it. Whenever there was an event my friends would always say ‘we have to go to Barbara’s, it’s going to be the best party ever’.” Barbara has been able to bring her dream to reality, bringing a little taste of Europe to Glencoe.
Barbara believes that as a business owner, you should always be looking for new ways to improve. She is currently looking at expanding her lunch menu and hiring an additional employee to help her manage day-to-day operations.
When I asked Barbara why customers may choose Red Rooster over other restaurants, she replied, “I think people have had enough of the traditional fried foods”, and I have to say I agree. The European dishes and desserts at Red Rooster are all freshly made and provide a heartier, healthier option for customers.
The community has also been very supportive. According to Barbara, she once closed the bistro for 3 days and had customers come back to say how much they had missed her and the bistro, while she was away:
“I have customers that know me and even come from Bolton, Thamesville, Windsor, and Hamilton, and because they know that I’m here and they like what I’m serving, they put the time to drive here. I have customers that came in when their child was a newborn and now these children come in and say ‘Hi Barbara, can I have a gelato’. I get to see them grow and come back, it’s very rewarding.”
Barbara excels not only as a chef, but as a hostess. She provides customers with a comfortable setting to experience her amazing dishes.
Restaurant trends may come and go, but Red Rooster is here to stay. Spend a day in Glencoe and stop by the Red Rooster for lunch and dessert!
